🍽️ Refreshing Salad with Melon Balls and Mozzarella Skewers

Ingredients
- 2 Spanish melons
- 150 ml white port wine
- 125 ml dry white wine
- Juice of one lemon
- 30 g powdered sugar
- fresh mint
- 300 g mini mozzarella balls
- 100 g small salami
- 150 g mixed leaf salad
- 1 red onion
- 1 tbsp white wine vinegar
- 1 tbsp balsamic vinegar
- salt
- pepper (from the mill)
- 3 tbsp olive oil
Instructions
- 1. Cut the melon in half.
- 2. Remove the seeds from the melon.
- 3. Use a small melon baller to scoop out balls from the flesh.
- 4. Whisk together port wine, white wine, powdered sugar, and lemon juice in a bowl.
- 5. Cut the mint leaves into thin strips.
- 6. Stir the mint strips into the wine mixture.
- 7. Place the melon balls in the marinade.
- 8. Cover the bowl.
- 9. Place the bowl in the refrigerator for about 24 hours.
- 10. Wash the salad greens shortly before serving.
- 11. Remove damaged leaves.
- 12. Shake the leaves dry.
- 13. Tear the leaves into smaller pieces if necessary.
- 14. Peel the onion.
- 15. Slice the onion into rings.
- 16. Whisk the vinegars with salt and pepper.
- 17. Add the oil.
- 18. Beat the mixture until an emulsified creamy sauce forms.
- 19. Adjust the seasoning of the dressing.
- 20. Thread one melon ball onto a small wooden skewer.
- 21. Fold a slice of salami.
- 22. Thread the folded salami onto the skewer.
- 23. Cut a piece of mozzarella.
- 24. Thread the mozzarella onto the skewer.
- 25. Toss the salad with the onion rings.
- 26. Arrange the salad on a large platter.
- 27. Drizzle the salad with the dressing.
- 28. Place the skewers decoratively into the salad.
