🍽️ Tender Peas with Yogurt Dressing

Ingredients
- 800 g fresh young pea pods
- 400 g yogurt (3.5% fat)
- salt
- pepper (from the mill)
- 2 tsp grated lemon zest (organic lemon)
- 1 tbsp olive oil
Instructions
- 1. Wash the fresh peas thoroughly.
- 2. Carefully remove the peas from their pods.
- 3. Bring water to a boil and add some salt.
- 4. Boil the peas for 2 minutes in the boiling water (this short cooking process is called blanching).
- 5. Drain the peas completely.
- 6. Place the peas on a plate.
- 7. Whisk the yogurt with salt, pepper, oil, and lemon zest until the mixture is smooth.
- 8. Drizzle the peas with the yogurt sauce.
- 9. Garnish the dish with fresh herbs.
- 10. Serve the peas.
- 11. If the peas are very tender and freshly picked, you can also eat them raw with the yogurt sauce.
