  1. 1. Turn on the oven to 180 degrees Celsius fan-forced.
  2. 2. Lightly grease the small baking molds with butter.
  3. 3. Roll out the puff pastry flat.
  4. 4. Cut out 10 circles from the dough that are slightly larger than the molds.
  5. 5. Place the dough circles into the prepared molds.
  6. 6. Prick the base of the dough circles several times with a fork.
  7. 7. Bake the pre-formed bases in the oven for about 15 minutes.
  8. 8. Peel the onion and cut it into very small cubes.
  9. 9. Heat one tablespoon of butter in a pan.
  10. 10. Sweat the onion cubes in the hot butter until they are translucent.
  11. 11. Cut the ham into narrow strips.
  12. 12. Mix the ham strips with the sautéed onions.
  13. 13. Place the ham-onion mixture into a bowl.
  14. 14. Stir crème fraîche and an egg into the mixture.
  15. 15. Season the filling with salt and pepper.
  16. 16. Remove the pre-baked tartlet bases from the oven.
  17. 17. Distribute the filling evenly over the tartlet bases.
  18. 18. Finish baking the filled tartlets for another 10 minutes.
  19. 19. Grate the truffle over them during the last 3 to 4 minutes of baking time.
  20. 20. Sprinkle the tartlets with the remaining butter flakes.
  21. 21. Remove the finished tartlets from the oven.
  22. 22. Serve the tartlets immediately.
