🍽️ Crispy Truffle Tartlets with Puff Pastry

Ingredients
- soft butter (for the molds)
- 350 g puff pastry
- 1 onion
- 3 tbsp butter
- 80 g Parma ham (in slices)
- 150 g crème fraîche
- 1 egg
- sea salt
- pepper (from the mill)
- 1 small truffle
Instructions
- 1. Turn on the oven to 180 degrees Celsius fan-forced.
- 2. Lightly grease the small baking molds with butter.
- 3. Roll out the puff pastry flat.
- 4. Cut out 10 circles from the dough that are slightly larger than the molds.
- 5. Place the dough circles into the prepared molds.
- 6. Prick the base of the dough circles several times with a fork.
- 7. Bake the pre-formed bases in the oven for about 15 minutes.
- 8. Peel the onion and cut it into very small cubes.
- 9. Heat one tablespoon of butter in a pan.
- 10. Sweat the onion cubes in the hot butter until they are translucent.
- 11. Cut the ham into narrow strips.
- 12. Mix the ham strips with the sautéed onions.
- 13. Place the ham-onion mixture into a bowl.
- 14. Stir crème fraîche and an egg into the mixture.
- 15. Season the filling with salt and pepper.
- 16. Remove the pre-baked tartlet bases from the oven.
- 17. Distribute the filling evenly over the tartlet bases.
- 18. Finish baking the filled tartlets for another 10 minutes.
- 19. Grate the truffle over them during the last 3 to 4 minutes of baking time.
- 20. Sprinkle the tartlets with the remaining butter flakes.
- 21. Remove the finished tartlets from the oven.
- 22. Serve the tartlets immediately.
