🍰 Crispy Puff Pastry Horns Filled with Ham and Arugula

Ingredients
- 150 g serrano or parma ham
- 2 bunch arugula
- 20 g butter
- 450 g puff pastry (10 slices)
- 100 g ricotta
- salt
- pepper (from the mill)
- 1 egg yolk
- 2 tbsp milk
Instructions
- 1. Cut the ham into small cubes.
- 2. Wash the arugula thoroughly.
- 3. Remove any damaged leaves from the arugula.
- 4. Dry the arugula well.
- 5. Roughly chop the arugula.
- 6. Heat the butter in a pan.
- 7. Sauté the arugula briefly in the hot butter.
- 8. Stir constantly while doing so.
- 9. Remove the pan from the heat as soon as the arugula has wilted.
- 10. Let the arugula mixture cool down slightly.
- 11. Let the puff pastry thaw at room temperature.
- 12. Line a baking sheet with baking paper.
- 13. Mix the ricotta, ham cubes, and cooled arugula in a bowl.
- 14. Season the filling with salt and pepper.
- 15. Place two sheets of puff pastry on top of each other.
- 16. Lightly dust a work surface with flour.
- 17. Roll out the dough on the floured surface into a rectangle.
- 18. The rectangle should be approximately 12 by 24 centimeters.
- 19. Cut the dough into three sharp triangles.
- 20. Cut from one corner to the middle of the opposite long side.
- 21. Place one heaped teaspoon of filling in the center of a triangle.
- 22. Repeat this for all triangles.
- 23. Roll the dough from the wide side towards the tip.
- 24. Curve the outer ends upwards to form horns.
