  1. 1. Let the puff pastry thaw at room temperature.
  2. 2. Roll the dough into a rectangular sheet using a rolling pin.
  3. 3. Whisk the egg white with the horseradish.
  4. 4. Season the mixture with some pepper.
  5. 5. Brush the puff pastry rectangle evenly with the egg white and horseradish mixture.
  6. 6. Place the slices of smoked salmon flat on the pastry.
  7. 7. Grate the cheese finely using a grater.
  8. 8. Sprinkle two-thirds of the grated cheese over the salmon.
  9. 9. Distribute two-thirds of the pistachios evenly over the cheese.
  10. 10. Cut the topped puff pastry into strips about one centimeter wide, starting from the short side.
  11. 11. Roll each individual strip tightly into a small roll.
  12. 12. Place the rolls on a baking sheet lined with baking paper.
  13. 13. Whisk the egg yolk with the milk to create a liquid.
  14. 14. Brush the surface of the rolls with the egg yolk and milk mixture.
  15. 15. Sprinkle the rolls with the remaining cheese.
  16. 16. Add the remaining pistachios on top.
  17. 17. Preheat the oven to 200 degrees Celsius top and bottom heat (alternatively 180 degrees Celsius fan or gas level 3).
  18. 18. Bake the rolls for 12 to 15 minutes until golden brown.
