Ingredients
- 400 g flour
- 1 tsp salt
- 150 ml water
- 1 egg yolk
- 500 g cold butter
- 100 g flour
- flour (for work surface)
Instructions
- 1. Sift the flour onto a clean work surface. Mix it with salt, water, and the egg yolk. Knead the ingredients into a smooth dough and place it in the refrigerator, covered, for about 30 minutes.
- 2. Quickly knead the butter with the flour until you have a uniform mass. Shape this into six small rectangular blocks. Also place these in the refrigerator for about 30 minutes.
- 3. Place the dough on a lightly floured surface and roll it out into a rectangle, about 3 millimeters thick. Make sure the center of the dough remains slightly thicker than the edges.
- 4. Place the butter blocks in the center of the rolled-out dough.
- 5. Pull the four corners of the dough tightly over the butter. Roll everything out into a rectangle about finger-thick. Gently brush off any excess flour with a brush.
- 6. Fold the bottom third of the dough over the center. Place the top third over it. Make sure the layers lie exactly on top of each other.
- 7. Rotate the dough package by 90 degrees so that the seam is facing right or left. Roll it out into a rectangle again. Now fold the dough plate into four parts. Work quickly so the dough does not get too warm, and brush off flour repeatedly.
- 8. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
- 9. Roll the dough out into a rectangle again and fold it into three parts. Then roll it out again and fold it into four parts.
- 10. Let the dough rest in the refrigerator overnight before using it further.
