  1. 1. Rinse the lime under hot water and dry it thoroughly. Grate the fine zest from half the lime. Then squeeze the lime juice.
  2. 2. Add the eggs, 2 tablespoons of hot water, 70 grams of sugar, and a pinch of salt to a mixing bowl. Beat the mixture with a hand mixer for about 3 minutes until creamy.
  3. 3. Mix the flour and baking powder. Gently fold the mixture into the egg cream using a spatula. Sprinkle the lime zest over it and fold it in as well.
  4. 4. Line a baking sheet with baking paper. Spread the batter evenly on it. Bake the cake in the center of the preheated oven at 200 degrees (convection: 180 degrees, gas: setting 3) for 8 to 10 minutes. Make sure the edges do not turn brown.
  5. 5. Meanwhile, cut a sheet of baking paper to the size of the baking sheet. Sprinkle it with 10 grams of sugar.
  6. 6. Invert the hot sponge cake immediately onto the sugared baking paper and press the edges firmly. Remove the top layer of baking paper and let the sponge cool completely. Trim the edges straight.
  7. 7. While the cake cools, soak the gelatin in cold water according to the package instructions. Gently wash the strawberries in standing water, drain them well, and hull them. Cut about one-third of the strawberries into 1-centimeter pieces.
  8. 8. Puree the remaining strawberries in a mixing beaker using a stick blender until smooth. Season the mixture with 1 tablespoon of lime juice and the remaining sugar.
  9. 9. Squeeze the gelatin well and warm it in a saucepan over low heat while stirring until it has completely dissolved.
  10. 10. Stir the strawberry puree and strawberry pieces into the dissolved gelatin. Transfer the mixture to a bowl and chill it until it begins to set.
  11. 11. Whip the cream until stiff and fold it into the strawberry mixture. Spread the strawberry cream over the sponge cake, but leave a 2-centimeter border around the edges.
  12. 12. Using the baking paper, roll the sponge cake tightly from the long side. Wrap it in the paper and carefully transfer it to a plate. Chill the roll for at least 1 hour so that the filling sets.
  13. 13. Carefully unwrap the strawberry roll from the paper. Dust it with powdered sugar, slice it, and serve.
