🍽️ Lemon Sponge Rolls

Ingredients
- 60 g Sugar
- 50 g Flour
- 2 Eggs
- 1 Pinch Salt
- 1 Lemon (juice and grated zest)
- 125 g Mascarpone
- 60 g Whipping Cream
- Sugar
Instructions
- 1. Separate the eggs. Put the egg whites into a bowl and add a pinch of salt.
- 2. Beat the egg whites with a hand mixer until stiff and airy.
- 3. Put the egg yolks into a separate bowl.
- 4. Add 40 grams of sugar and two tablespoons of hot water to the egg yolks.
- 5. Beat the yolk mixture with a hand mixer until creamy.
- 6. Sift the flour over the yolk mixture.
- 7. Gently fold half of the egg whites into the mixture using a spoon.
- 8. Add the remaining egg whites.
- 9. Gently fold in the remaining egg whites as well.
- 10. Line half of a baking tray with baking paper.
- 11. Spread the batter evenly onto the baking paper.
- 12. Preheat the oven to 200 degrees.
- 13. Bake the batter in the preheated oven for about 10 minutes.
- 14. Remove the baking tray from the oven.
- 15. Immediately turn the hot cake out onto a kitchen towel.
- 16. Dust the kitchen towel with some sugar beforehand.
- 17. Lightly moisten the baking paper with water.
- 18. Carefully peel the baking paper off the cake.
- 19. Cut the cake in half lengthwise.
- 20. Roll the first half into a roll using the towel, starting from the long side.
- 21. Roll the second half tightly as well.
- 22. Let the rolls cool down completely.
- 23. Put the lemon juice into a bowl.
- 24. Add the grated lemon zest.
- 25. Add the remaining sugar.
- 26. Add the mascarpone cheese.
- 27. Mix all ingredients well together.
- 28. Beat the cream until stiff.
- 29. Gently fold the beaten cream into the lemon cream.
- 30. Carefully unroll the cooled sponge rolls.
- 31. Spread the lemon cream evenly over the rolls.
- 32. Leave a small border free at the edge of the roll.
- 33. Roll the sponge rolls up tightly again.
- 34. Trim off any cream that squeezes out with a knife.
- 35. Slice the rolls into pieces.
- 36. The slices should be about 2 to 3 centimeters thick.
