  1. 1. Separate the eggs. Put the egg whites into a bowl and add a pinch of salt.
  2. 2. Beat the egg whites with a hand mixer until stiff and airy.
  3. 3. Put the egg yolks into a separate bowl.
  4. 4. Add 40 grams of sugar and two tablespoons of hot water to the egg yolks.
  5. 5. Beat the yolk mixture with a hand mixer until creamy.
  6. 6. Sift the flour over the yolk mixture.
  7. 7. Gently fold half of the egg whites into the mixture using a spoon.
  8. 8. Add the remaining egg whites.
  9. 9. Gently fold in the remaining egg whites as well.
  10. 10. Line half of a baking tray with baking paper.
  11. 11. Spread the batter evenly onto the baking paper.
  12. 12. Preheat the oven to 200 degrees.
  13. 13. Bake the batter in the preheated oven for about 10 minutes.
  14. 14. Remove the baking tray from the oven.
  15. 15. Immediately turn the hot cake out onto a kitchen towel.
  16. 16. Dust the kitchen towel with some sugar beforehand.
  17. 17. Lightly moisten the baking paper with water.
  18. 18. Carefully peel the baking paper off the cake.
  19. 19. Cut the cake in half lengthwise.
  20. 20. Roll the first half into a roll using the towel, starting from the long side.
  21. 21. Roll the second half tightly as well.
  22. 22. Let the rolls cool down completely.
  23. 23. Put the lemon juice into a bowl.
  24. 24. Add the grated lemon zest.
  25. 25. Add the remaining sugar.
  26. 26. Add the mascarpone cheese.
  27. 27. Mix all ingredients well together.
  28. 28. Beat the cream until stiff.
  29. 29. Gently fold the beaten cream into the lemon cream.
  30. 30. Carefully unroll the cooled sponge rolls.
  31. 31. Spread the lemon cream evenly over the rolls.
  32. 32. Leave a small border free at the edge of the roll.
  33. 33. Roll the sponge rolls up tightly again.
  34. 34. Trim off any cream that squeezes out with a knife.
  35. 35. Slice the rolls into pieces.
  36. 36. The slices should be about 2 to 3 centimeters thick.
