  1. 1. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Rinse the lemon under hot water, pat dry, grate the zest finely, and squeeze out the juice.
  2. 2. Mix the egg yolks well with the lemon zest, quark, sugar, starch, and ground almonds. Gently fold the egg whites into the quark mixture.
  3. 3. Grease the baking dish with butter. Wash the pears, halve them, remove the stems, and drizzle the cut surfaces with lemon juice.
  4. 4. Place the quark mixture into the dish and smooth it out. Arrange the pears cut-side up on the quark mixture and press them in slightly.
  5. 5. Sprinkle the mixture with sliced almonds. Bake the pear quark casserole in the preheated oven at 200 °C (convection 180 °C; gas mark 3) for 30 minutes.
  6. 6. Remove the pear quark casserole from the oven, dust it with powdered sugar, and serve it lukewarm.
