🍝 Creamy Pasta with Pears, Walnuts, and Radicchio

Ingredients
- 2 small shallots
- 150 g radicchio (1 small head)
- 250 g small pears (2 small pears)
- 25 g walnut kernels
- 200 g whole grain pasta
- salt
- 1.5 tbsp olive oil
- 100 ml soy cream
- black pepper
Instructions
- 1. Peel the shallots and dice them into very small cubes.
- 2. Wash the radicchio, dry it thoroughly, and slice it into thin strips.
- 3. Wash the pears, quarter them, remove the core, and cut the flesh into 1 cm cubes.
- 4. Roughly chop the walnuts.
- 5. Toast the walnuts in a non-stick pan without oil over medium heat for a short time.
- 6. Remove the walnuts from the pan and wipe the pan clean.
- 7. Cook the pasta in boiling salted water according to the package instructions.
- 8. Add some oil to the pan and sauté the shallot and pear cubes over medium heat for 5 to 6 minutes, stirring occasionally.
- 9. Add the toasted walnuts back into the pan with the pears and shallots.
- 10. Add the soy cream sauce and let it simmer for 2 to 3 minutes until creamy.
- 11. Season the sauce with salt and pepper to taste.
- 12. Drain the pasta and let it drain well.
- 13. Add the drained pasta and radicchio strips to the pan with the sauce.
- 14. Toss everything thoroughly until the pasta is evenly coated.
- 15. Serve the dish immediately with freshly ground pepper from a mill.
