  1. 1. Peel the shallots and dice them into very small cubes.
  2. 2. Wash the radicchio, dry it thoroughly, and slice it into thin strips.
  3. 3. Wash the pears, quarter them, remove the core, and cut the flesh into 1 cm cubes.
  4. 4. Roughly chop the walnuts.
  5. 5. Toast the walnuts in a non-stick pan without oil over medium heat for a short time.
  6. 6. Remove the walnuts from the pan and wipe the pan clean.
  7. 7. Cook the pasta in boiling salted water according to the package instructions.
  8. 8. Add some oil to the pan and sauté the shallot and pear cubes over medium heat for 5 to 6 minutes, stirring occasionally.
  9. 9. Add the toasted walnuts back into the pan with the pears and shallots.
  10. 10. Add the soy cream sauce and let it simmer for 2 to 3 minutes until creamy.
  11. 11. Season the sauce with salt and pepper to taste.
  12. 12. Drain the pasta and let it drain well.
  13. 13. Add the drained pasta and radicchio strips to the pan with the sauce.
  14. 14. Toss everything thoroughly until the pasta is evenly coated.
  15. 15. Serve the dish immediately with freshly ground pepper from a mill.
