🍰 Juicy Pear Cheesecake from the Baking Tray

Ingredients
- 300 g spelt whole wheat flour
- 1 tbsp cocoa powder
- 3 tsp baking powder
- 1 pinch salt
- 1 vanilla pod
- 400 g low-fat quark
- 6 tbsp rapeseed oil
- 4 eggs
- 125 g whole cane sugar
- 1 organic lemon
- 1.5 kg pears
- 250 g crème fraîche
- 1 tbsp cornstarch
- 1 pinch clove powder
- 1 pinch ginger powder
- 1 tbsp powdered sugar from whole cane sugar
Instructions
- 1. Put flour, cocoa powder, baking powder, and a pinch of salt into a bowl and stir briefly.
- 2. Slit the vanilla pod lengthwise and scrape out the tiny seeds with a knife.
- 3. Add the vanilla seeds, 150 grams of quark, the oil, one egg, and 50 grams of sugar to the flour mixture.
- 4. Knead everything into a smooth dough, roll it out, and place it on a baking sheet.
- 5. Press a small edge around the sides of the dough so that nothing spills out later.
- 6. Rinse the lemon under hot water and pat it dry with a cloth.
- 7. Grate the lemon zest finely and squeeze out the juice.
- 8. Peel the pears and cut them in half lengthwise.
- 9. Remove the core from the pear halves.
- 10. Cut thin slices into the pears starting from the top, but do not cut all the way through.
- 11. Drizzle the prepared pears with the lemon juice.
- 12. Separate the remaining eggs so that you have distinct egg yolks and egg whites.
- 13. Beat the egg whites stiffly with a mixer.
- 14. Whisk the egg yolks with the lemon zest, the remaining quark, sugar, crème fraîche, starch, ground cloves, and ground ginger until smooth.
- 15. Gently fold the stiff egg whites into the egg yolk mixture.
- 16. Spread the cream evenly over the dough in the baking sheet.
- 17. Place the pears cut-side down on the cream.
- 18. Press the pears slightly into the cream.
- 19. Preheat the oven to 180 degrees Celsius top and bottom heat (160 degrees convection or gas mark 2 to 3).
- 20. Bake the cake in the oven for 30 minutes.
- 21. Remove the cake from the oven and let it cool completely.
- 22. Dust the cold cake with powdered sugar before serving.
