  1. 1. Put flour, cocoa powder, baking powder, and a pinch of salt into a bowl and stir briefly.
  2. 2. Slit the vanilla pod lengthwise and scrape out the tiny seeds with a knife.
  3. 3. Add the vanilla seeds, 150 grams of quark, the oil, one egg, and 50 grams of sugar to the flour mixture.
  4. 4. Knead everything into a smooth dough, roll it out, and place it on a baking sheet.
  5. 5. Press a small edge around the sides of the dough so that nothing spills out later.
  6. 6. Rinse the lemon under hot water and pat it dry with a cloth.
  7. 7. Grate the lemon zest finely and squeeze out the juice.
  8. 8. Peel the pears and cut them in half lengthwise.
  9. 9. Remove the core from the pear halves.
  10. 10. Cut thin slices into the pears starting from the top, but do not cut all the way through.
  11. 11. Drizzle the prepared pears with the lemon juice.
  12. 12. Separate the remaining eggs so that you have distinct egg yolks and egg whites.
  13. 13. Beat the egg whites stiffly with a mixer.
  14. 14. Whisk the egg yolks with the lemon zest, the remaining quark, sugar, crème fraîche, starch, ground cloves, and ground ginger until smooth.
  15. 15. Gently fold the stiff egg whites into the egg yolk mixture.
  16. 16. Spread the cream evenly over the dough in the baking sheet.
  17. 17. Place the pears cut-side down on the cream.
  18. 18. Press the pears slightly into the cream.
  19. 19. Preheat the oven to 180 degrees Celsius top and bottom heat (160 degrees convection or gas mark 2 to 3).
  20. 20. Bake the cake in the oven for 30 minutes.
  21. 21. Remove the cake from the oven and let it cool completely.
  22. 22. Dust the cold cake with powdered sugar before serving.
