  1. 1. Mix the whole wheat flour with the ground almonds, a pinch of salt, the coconut blossom sugar, one egg, and the butter cubes.
  2. 2. Knead the ingredients by hand until a soft dough forms.
  3. 3. Shape the dough into a ball.
  4. 4. Wrap the dough ball in cling film.
  5. 5. Let the dough rest in the fridge for 30 minutes.
  6. 6. Wash the pears.
  7. 7. Halve the pears and remove the core.
  8. 8. Cut the flesh into thin slices.
  9. 9. Place the pears in a bowl.
  10. 10. Mix the pears with the lemon juice and the ground cloves.
  11. 11. Scrape the seeds out of the vanilla pod.
  12. 12. Stir the quark with the remaining egg, the crème fraîche, the honey, and the vanilla seeds until smooth.
  13. 13. Ensure you have a smooth cream.
  14. 14. Grease the baking pan if necessary.
  15. 15. Roll out the dough on a floured surface.
  16. 16. Place the dough in the pan.
  17. 17. Spread the cream in the center of the dough.
  18. 18. Leave the edge of the dough free.
  19. 19. Arrange the pear slices on top of the cream.
  20. 20. Fold the dough edge towards the center.
  21. 21. Preheat the oven to 180 degrees Celsius (or 160 degrees Celsius fan/Gas level 2-3).
  22. 22. Bake the tart for about 45 minutes until golden brown.
  23. 23. Let the tart cool in the pan.
  24. 24. Cut the tart into pieces.
  25. 25. Serve the tart.
