🍽️ Freeform Pear Tart

Ingredients
- 150 g wheat wholemeal flour (and some flour for working)
- 50 g ground almond kernels
- 1 pinch salt
- 60 g coconut blossom sugar
- 2 eggs
- 100 g butter
- 2 pears
- 2 tbsp lemon juice
- 4 cloves
- 0.5 vanilla pod
- 250 g quark
- 100 g crème fraîche
- 2 tbsp liquid honey
Instructions
- 1. Mix the whole wheat flour with the ground almonds, a pinch of salt, the coconut blossom sugar, one egg, and the butter cubes.
- 2. Knead the ingredients by hand until a soft dough forms.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in cling film.
- 5. Let the dough rest in the fridge for 30 minutes.
- 6. Wash the pears.
- 7. Halve the pears and remove the core.
- 8. Cut the flesh into thin slices.
- 9. Place the pears in a bowl.
- 10. Mix the pears with the lemon juice and the ground cloves.
- 11. Scrape the seeds out of the vanilla pod.
- 12. Stir the quark with the remaining egg, the crème fraîche, the honey, and the vanilla seeds until smooth.
- 13. Ensure you have a smooth cream.
- 14. Grease the baking pan if necessary.
- 15. Roll out the dough on a floured surface.
- 16. Place the dough in the pan.
- 17. Spread the cream in the center of the dough.
- 18. Leave the edge of the dough free.
- 19. Arrange the pear slices on top of the cream.
- 20. Fold the dough edge towards the center.
- 21. Preheat the oven to 180 degrees Celsius (or 160 degrees Celsius fan/Gas level 2-3).
- 22. Bake the tart for about 45 minutes until golden brown.
- 23. Let the tart cool in the pan.
- 24. Cut the tart into pieces.
- 25. Serve the tart.
