🍰 Canning pears

Ingredients
- 1 Lemon
- 1 kg Pears
- 4 leaves Lemon balm
- 1 Cinnamon stick
- 50 ml Apple juice
- 150 g Coconut blossom sugar
- 4 Cloves
Instructions
- 1. Fill a large pot with water and bring it to a boil.
- 2. Place the canning jars in the boiling water.
- 3. Boil the jars for 10 minutes to sterilize them.
- 4. Remove the jars from the water.
- 5. Dry the jars thoroughly.
- 6. Squeeze the lemon.
- 7. Add the lemon juice to a bowl with some water.
- 8. Wash the pears.
- 9. Peel the pears.
- 10. Cut the pears in half.
- 11. Remove the core from the pear halves.
- 12. Place the pears immediately into the lemon water.
- 13. Boil the pears for about 1 minute in boiling water.
- 14. Plunge the pears briefly into cold water.
- 15. Let the pears drain well.
- 16. Fill the pears into the prepared jars.
- 17. Wash the lemon balm.
- 18. Shake the lemon balm dry.
- 19. Pluck the leaves off the lemon balm.
- 20. Break the cinnamon stick into small pieces.
- 21. Bring 450 milliliters of water to a boil with apple juice.
- 22. Add coconut blossom sugar, cloves, and cinnamon.
- 23. Stir until the sugar has dissolved.
- 24. Add the lemon balm.
- 25. Pour the hot liquid over the pears.
- 26. Fill the liquid up to about 1 centimeter below the rim of the jar.
- 27. Clean the jar rims.
- 28. Seal the jars tightly with a canning ring, clamps, and lid.
- 29. Place a kitchen towel on the bottom of a tall pot.
- 30. Place the jars on the kitchen towel.
- 31. Fill the pot with water until the jars are completely covered.
- 32. Heat the water slowly to a constant 90 degrees Celsius.
- 33. Boil the jars for about 30 minutes.
- 34. Turn off the stove.
- 35. Carefully lift the jars out of the water after about 10 minutes.
- 36. Place the jars on a kitchen towel.
- 37. Let the jars cool.
