  6. 6. Melt the honey in the hot pan.
  7. 7. Toss the pear wedges in the honey.
  8. 8. Deglaze the pan with apple juice.
  9. 9. Shake the pan regularly.
  10. 10. Let the pears caramelize slightly.
  11. 11. Remove the pears from the pan.
  12. 12. Let the pears cool down briefly.
  13. 13. Melt 2 tablespoons of butter in a small saucepan.
  14. 14. Separate the eggs.
  15. 15. Put flour and almonds into a large bowl.
  16. 16. Pour milk into the flour and almonds.
  17. 17. Whisk the mixture until smooth.
  18. 18. Add the egg yolks to the bowl.
  19. 19. Add the melted butter to the bowl.
  20. 20. Add 1 tablespoon of full-cane sugar to the bowl.
  21. 21. Add a pinch of salt to the bowl.
  22. 22. Mix everything until smooth.

  24. 24. Add the remaining full-cane sugar to the egg whites.
  25. 25. Beat the egg whites with the sugar until stiff.

  28. 28. Melt the remaining butter in an oven-safe pan.
  29. 29. Pour the batter into the pan.
  30. 30. Place the pan over medium heat.
  31. 31. Let the batter brown slightly for 1 to 2 minutes.
