🍰 Juicy Pear Bake

Ingredients
- 2 pears
- 1 tbsp honey
- 20 ml apple juice
- 3 tbsp butter
- 4 eggs
- 100 g spelt whole wheat flour
- 50 g ground almond kernels
- 250 ml milk (3.5% fat)
- 2 tbsp demerara sugar
- 1 pinch salt
- 1 tsp powdered sugar from demerara sugar
Instructions
- 1. Peel the pears.
- 2. Cut the pears into quarters.
- 3. Remove the core from the quarters.
- 4. Slice the pear quarters into thin wedges.
- 5. Heat a pan.
- 6. Melt the honey in the hot pan.
- 7. Toss the pear wedges in the honey.
- 8. Deglaze the pan with apple juice.
- 9. Shake the pan regularly.
- 10. Let the pears caramelize slightly.
- 11. Remove the pears from the pan.
- 12. Let the pears cool down briefly.
- 13. Melt 2 tablespoons of butter in a small saucepan.
- 14. Separate the eggs.
- 15. Put flour and almonds into a large bowl.
- 16. Pour milk into the flour and almonds.
- 17. Whisk the mixture until smooth.
- 18. Add the egg yolks to the bowl.
- 19. Add the melted butter to the bowl.
- 20. Add 1 tablespoon of full-cane sugar to the bowl.
- 21. Add a pinch of salt to the bowl.
- 22. Mix everything until smooth.
- 23. Beat the egg whites until stiff.
- 24. Add the remaining full-cane sugar to the egg whites.
- 25. Beat the egg whites with the sugar until stiff.
- 26. Take a spatula.
- 27. Gently fold the egg whites into the batter.
- 28. Melt the remaining butter in an oven-safe pan.
- 29. Pour the batter into the pan.
- 30. Place the pan over medium heat.
- 31. Let the batter brown slightly for 1 to 2 minutes.
- 32. Top the batter with the pear wedges.
- 33. Preheat the oven.
- 34. Set the oven to 220 °C.
- 35. Use convection at 200 °C or gas setting 3 to 4.
- 36. Place the pan in the oven.
- 37. Bake the bake for 5 to 10 minutes.
- 38. Watch for the bake to rise (soufflé).
- 39. Remove the bake from the oven.
- 40. Dust the bake with powdered sugar.
- 41. Serve the bake immediately.
