🍰 Organic Spelt Fruit-Nut Bread with Raisins and Macadamia

Ingredients
- 250 g DonathBio Spelt Flour 1050 (available at Reformhaus® ())
- 2 tsp Brecht Cinnamon Ceylon (available at Reformhaus®, in organic quality)
- 1 pinch Salt
- 2 tsp Baking Powder (in organic quality)
- 1 tbsp Reformhaus® Pear Syrup (in organic quality)
- 150 ml Apple Juice (in organic quality)
- 200 g Reformhaus® Macadamia Nut Kernels (in organic quality)
- 100 g Reformhaus® Bananas natural (in organic quality)
- 70 g Reformhaus® Apple Chips (in organic quality)
- 75 g Reformhaus® Flaxseed gold & cracked (in organic quality)
- 200 g Reformhaus® Raisins (in organic quality)
- 50 g Reformhaus® Mulberries (in organic quality)
Instructions
- 1. Put the organic spelt flour into a large bowl.
- 2. Mix the cinnamon, salt, and baking powder (a leavening agent) well into the flour.
- 3. Take the date syrup, the apple juice, and 200 milliliters of water.
- 4. Mix the liquids with the flour mixture.
- 5. Stir until a smooth dough forms.
- 6. Roughly chop the macadamia nuts, bananas, and apple chips.
- 7. Set aside 150 grams of the chopped nuts.
- 8. Add the remaining nuts, apple chips, flaxseeds, raisins, and mulberries to the dough.
- 9. Mix all ingredients in the dough thoroughly.
- 10. Line a loaf pan (30 centimeters long) with baking paper.
- 11. Pour the dough into the prepared pan.
- 12. Smooth the surface of the dough.
- 13. Sprinkle the reserved macadamia nut kernels over the top.
- 14. Press the nuts into the dough slightly.
- 15. Preheat the oven to 200 degrees Celsius (convection 180 degrees Celsius; gas mark 3).
- 16. Bake the bread for about 50 minutes.
- 17. Perform the skewer test to check if the bread is done.
- 18. Cover the bread with aluminum foil if necessary to prevent the nuts from browning too much.
- 19. Let the fruit-nut bread cool down completely.
- 20. Slice the cooled bread.
