🍰 Bethmännchen Without Flour

Ingredients
- 2 egg whites
- 150 g powdered sugar
- 150 g marzipan raw mass
- 40 ml rum (or 1-2 tbsp water and rum flavor)
- 200 g finely ground almond kernels (peeled)
- 100 g peeled, whole almond kernels
- egg whites (for brushing)
Instructions
- 1. Beat the egg whites together with the sugar until stiff peaks form.
- 2. Stir the marzipan until smooth with the rum.
- 3. Gently fold the marzipan-rum mixture together with the ground almonds into the egg white foam.
- 4. Knead everything into a moldable dough.
- 5. Place the dough, covered, in the refrigerator for at least 30 minutes.
- 6. Preheat the oven to 160 degrees Celsius fan setting.
- 7. Form small balls from the mixture.
- 8. Press three almonds into the surface of each ball.
- 9. Place the cookies on a baking sheet lined with baking paper.
- 10. Brush the cookies with the remaining egg white.
- 11. Bake the cookies in the oven for about 20 minutes until golden brown.
- 12. Remove the cookies from the oven and let them cool down.
- 13. Spread a light layer of powdered sugar over the cooled cookies and serve them.
