  1. 1. Rinse the lime thoroughly under hot water and pat it dry. Grate the zest finely and mix it in a bowl with the coconut flakes and the flour.
  2. 2. Squeeze the lime and reserve exactly 1 teaspoon of juice. Separate the eggs (use the yolk for something else). Beat the egg whites, a pinch of salt, and the lime juice with the hand mixer until stiff.
  3. 3. Slowly pour in the sugar and continue beating until you have a glossy and stiff egg white foam.
  4. 4. Gently fold the coconut-flour mixture into the egg white foam using a rubber spatula. Line a baking sheet with baking paper.
  5. 5. Place the wafer biscuits on the tray, leaving about 5 millimeters of space between each. Fill the egg white foam into a piping bag with a large star tip. Pipe the mixture onto the biscuits, leaving a small border around the edge.
  6. 6. Let the macaroons dry at room temperature for 6 hours. Then bake them in the preheated oven at 175 degrees Celsius conventional heat (convection: 150 degrees Celsius, gas: level 2) on the second rack from the bottom for 8 to 12 minutes, until the surface is very lightly browned. Let them cool on a wire rack.
