🍽️ Berlin Beer Soup

Ingredients
- 2 stale whole wheat rolls
- 2 tbsp butter
- 2 large onions
- 500 ml hot water
- 1.5 tsp vegetable broth
- 500 ml dark beer (or non-alcoholic Altbier)
- salt
- pepper (from the mill)
- nutmeg
Instructions
- 1. Cut the bread rolls into small cubes. Fry them in half of the butter in a pan over medium heat until golden brown and crispy. Remove the croutons and keep them warm.
- 2. Peel the onions and slice them into thin rings. Fry the onion rings in the remaining butter over medium heat until golden brown. Keep these warm as well.
- 3. Wash the chives, pat them dry, and cut them into fine rings. Season the water with the broth. Stir in the beer and heat the liquid. Season with salt, pepper, and nutmeg.
- 4. Fill pre-warmed soup bowls with the bread cubes, onion rings, and chives. Pour the hot liquid over them and serve the soup immediately.
