🍽️ Belgian Beef Stew

Ingredients
- 800 g lean beef (e.g. from the round)
- 3 sprigs thyme
- 400 g onions
- 2 garlic cloves
- 3 tbsp oil
- 4 tbsp flour
- 0.5 organic lemon
- 250 ml classic vegetable broth
- 330 ml dark beer (or malt beer)
- salt
- pepper
- 1 level tbsp brown sugar (or some honey to taste)
Instructions
- 1. Rinse the meat under cold water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into cubes about 3 to 4 centimeters in size.
- 4. Wash the thyme sprigs under running water.
- 5. Shake the thyme sprigs dry.
- 6. Set the thyme sprigs aside.
- 7. Peel the onions.
- 8. Slice the onions into thin rings.
- 9. Peel the garlic cloves.
- 10. Chop the garlic finely.
- 11. Heat the oil in a large pan.
- 12. Toss the meat cubes in flour until lightly coated.
- 13. Shake off any excess flour from the meat.
- 14. Fry the meat pieces in two batches in the hot oil.
- 15. Brown the meat well until it is brown.
- 16. Remove the browned meat from the pan.
- 17. Place the meat in a casserole dish.
- 18. Add the onions to the remaining frying fat in the pan.
- 19. Add the garlic to the remaining frying fat in the pan.
- 20. Fry the onions and garlic, stirring frequently, until golden brown.
- 21. Fry the onions and garlic for about 10 minutes.
- 22. Add the fried onions to the meat in the casserole dish.
- 23. Add the fried garlic to the meat in the casserole dish.
- 24. Wash the lemon under hot water.
- 25. Dry the lemon.
- 26. Grate some fine zest from the lemon.
- 27. Add the broth to the meat in the casserole dish.
- 28. Add the beer to the meat in the casserole dish.
- 29. Add the thyme sprigs to the meat in the casserole dish.
- 30. Add about 2 teaspoons of lemon zest to the meat in the casserole dish.
- 31. Add salt to the meat in the casserole dish.
- 32. Add pepper to the meat in the casserole dish.
- 33. Bring everything to a boil under the lid.
- 34. Reduce the heat.
- 35. Let the dish simmer for about 2 hours at medium heat.
- 36. Add more beer or broth if necessary.
- 37. Stir in sugar or honey shortly before the end of the cooking time.
- 38. Taste the dish again and adjust with salt and pepper.
- 39. Serve the dish with wide noodles or creamy polenta.
