🍰 Crispy Belgian Waffles with Oats and Chocolate

Ingredients
- 1 vanilla pod
- 60 g raw cane sugar
- 300 g Greek yogurt
- 50 g fine oat flakes
- 150 g spelt flour Type 1050
- 1 pinch salt
- 0.5 cube yeast
- 300 ml lukewarm milk (3.5 % fat)
- 50 g melted butter
- 2 eggs
- 100 g dark chocolate (min. 70 % cocoa)
- 50 g ground almonds
- 20 g highly defatted cocoa powder (3 tbsp)
- 3 apricots
- 3 yellow plums
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the seeds with a knife.
- 3. Take two knife-tip portions of the vanilla seeds.
- 4. Mix these seeds with one tablespoon of sugar and the yogurt.
- 5. Place the yogurt mixture in the refrigerator to chill.
- 6. Put the oat flakes into a blender.
- 7. Grind the flakes into fine flour.
- 8. Transfer the oat flour into a bowl.
- 9. Add the remaining vanilla seeds.
- 10. Add the sugar.
- 11. Add the spelt flour to the bowl.
- 12. Add a pinch of salt.
- 13. Mix the dry ingredients.
- 14. Crumble the yeast into small pieces.
- 15. Add the yeast to the other ingredients.
- 16. Add the milk.
- 17. Add the butter.
- 18. Add the eggs.
- 19. Mix everything with a hand mixer.
- 20. Stir until the batter is smooth.
- 21. Cover the batter with a clean kitchen towel.
- 22. Place the batter in a warm spot.
- 23. Let the batter rise for about one hour.
- 24. Finely grate the chocolate.
- 25. Take two tablespoons of the grated chocolate.
- 26. Set this chocolate aside for decoration.
- 27. Add the remaining chocolate to the waffle batter.
- 28. Add the almonds to the batter.
- 29. Add the cocoa powder to the batter.
- 30. Fold the ingredients in carefully.
- 31. Preheat the waffle iron.
- 32. Grease the waffle iron if necessary.
- 33. Pour about four tablespoons of batter into the waffle iron.
- 34. Close the waffle iron.
- 35. Bake the waffles.
- 36. Use the remaining batter in the same way.
- 37. Wash the apricots.
- 38. Wash the plums.
- 39. Remove the pits from the apricots and plums.
- 40. Cut the apricots into wedges.
- 41. Cut the plums into wedges.
- 42. Serve the waffles on plates.
- 43. Garnish the waffles with the yogurt mixture.
- 44. Garnish the waffles with the apricots.
- 45. Garnish the waffles with the plums.
- 46. Garnish the waffles with the grated chocolate.
