🍳 Fruity Berry Jam

Ingredients
- 500 g gooseberries
- 1 kg red currants
- 1 lemon (squeezed)
- 500 g jam sugar (3:1)
Instructions
- 1. Rinse the berries under running water.
- 2. Remove any wilted or rotten spots.
- 3. Strip the berries from the stems.
- 4. Place the cleaned fruit together with the lemon juice into a food mill.
- 5. Press the mixture through the mill until a smooth puree forms.
- 6. Measure the puree amount.
- 7. If there is less than 1250 milliliters, add water.
- 8. Ensure you have exactly 1250 milliliters of liquid at the end.
- 9. Pour the fruit mixture into a large pot.
- 10. Add the jam sugar.
- 11. Place the pot on the stove.
- 12. Stir the mixture constantly.
- 13. Bring the mixture to a boil.
- 14. Let the jam bubble vigorously for four minutes.
- 15. Remove the pot from the heat.
- 16. Fill the hot jam into the prepared jars.
- 17. Fill the jars to the brim.
- 18. Seal the jars tightly with the lids.
- 19. Place the sealed jars upside down.
- 20. Let the jars stand on their lids for ten minutes.
- 21. Turn the jars back over.
- 22. Let the jam cool down completely.
