🍽️ Fruity Berry-Pear Ice Cream

Ingredients
- 200 g strawberries
- 200 g raspberries
- 100 g blueberries
- 100 g blackberries
- 2 tbsp sugar
- 2 tbsp Grand Marnier (to taste)
- 150 g sugar
- 200 g strawberries

- 2 tbsp lemon juice
- 200 ml sparkling wine
- 125 g sugar
- 125 ml pear juice
- 600 g aromatic pears
- juice of one lemon
- 40 ml pear brandy
- 1 egg white
Instructions
- 1. Wash the berries thoroughly and remove any stems or leaves.
- 2. Cut the strawberries into small pieces.
- 3. Mix the strawberries with the sugar.
- 4. Add a splash of Grand Marnier (orange liqueur) to taste.
- 5. Let the mixture sit for a short while to allow the flavors to blend.
- 6. Transfer the berry mixture into small bowls.
- 7. Dissolve the sugar in 200 milliliters of water.
- 8. Let the sugar-water mixture simmer gently for about 15 minutes to create a syrup.
- 9. Remove the pan from the heat and let the syrup cool down.
- 10. Wash the berries again and sort them to remove any unripe parts.
- 11. Hull the strawberries and cut them into small pieces.
- 12. Puree all the berries with the lemon juice.
- 13. Pass the mixture through a fine sieve to remove seeds and fibers.
- 14. Stir in the cooled syrup into the berry mixture.
- 15. Stir in the sparkling wine.
- 16. Pour the mixture into a shallow metal bowl.
- 17. Place it in the freezer for at least four hours.
- 18. Stir occasionally with a fork to prevent large ice crystals from forming.
- 19. Bring the sugar and pear juice to a boil.
- 20. Peel the pears and halve them.
- 21. Remove the core from the pear halves.
- 22. Cut the pear flesh into small cubes.
- 23. Cook the pear pieces in the sugar solution until they are soft and almost falling apart.
- 24. Puree the mixture through a sieve.
- 25. Season with lemon juice.
- 26. Add a splash of pear brandy.
- 27. Allow the mixture to cool completely.
- 28. Separate the egg whites from the yolks.
- 29. Whisk the egg whites until they form soft peaks.
- 30. Gently fold the foamy mixture into the cooled pear mixture to keep it airy.
- 31. Pour the finished sorbet mixture into a shallow metal bowl.
- 32. Place it in the freezer compartment.
- 33. Let it freeze while stirring occasionally.
- 34. You can also finish the mixture in an ice cream maker if you have one.
- 35. Take the sorbet portions out of the freezer briefly to make them easier to shape.
- 36. Use a warm spoon to scoop out nice balls or mounds of ice.
- 37. Place the ice portions on top of the mixed berry mixture.
- 38. Serve immediately.
