  1. 1. Wash the berries thoroughly and remove any stems or leaves.
  2. 2. Cut the strawberries into small pieces.
  3. 3. Mix the strawberries with the sugar.
  4. 4. Add a splash of Grand Marnier (orange liqueur) to taste.
  5. 5. Let the mixture sit for a short while to allow the flavors to blend.
  6. 6. Transfer the berry mixture into small bowls.
  7. 7. Dissolve the sugar in 200 milliliters of water.
  8. 8. Let the sugar-water mixture simmer gently for about 15 minutes to create a syrup.
  9. 9. Remove the pan from the heat and let the syrup cool down.
  10. 10. Wash the berries again and sort them to remove any unripe parts.
  11. 11. Hull the strawberries and cut them into small pieces.
  12. 12. Puree all the berries with the lemon juice.
  13. 13. Pass the mixture through a fine sieve to remove seeds and fibers.
  14. 14. Stir in the cooled syrup into the berry mixture.
  15. 15. Stir in the sparkling wine.
  16. 16. Pour the mixture into a shallow metal bowl.
  17. 17. Place it in the freezer for at least four hours.
  18. 18. Stir occasionally with a fork to prevent large ice crystals from forming.
  19. 19. Bring the sugar and pear juice to a boil.
  20. 20. Peel the pears and halve them.
  21. 21. Remove the core from the pear halves.
  22. 22. Cut the pear flesh into small cubes.
  23. 23. Cook the pear pieces in the sugar solution until they are soft and almost falling apart.
  24. 24. Puree the mixture through a sieve.

  28. 28. Separate the egg whites from the yolks.
  29. 29. Whisk the egg whites until they form soft peaks.
  30. 30. Gently fold the foamy mixture into the cooled pear mixture to keep it airy.
  31. 31. Pour the finished sorbet mixture into a shallow metal bowl.
  32. 32. Place it in the freezer compartment.

  34. 34. You can also finish the mixture in an ice cream maker if you have one.
  35. 35. Take the sorbet portions out of the freezer briefly to make them easier to shape.
