  1. 1. Remove the stems from the berries.
  2. 2. Rinse the berries briefly under running water.
  3. 3. Pat the berries dry with a kitchen towel.
  4. 4. Remove any hard or inedible parts.
  5. 5. Cut the berries into small pieces if necessary.
  6. 6. Take about half of the prepared berries.
  7. 7. Place the berries in a bowl.
  8. 8. Sprinkle the berries with 20 g of powdered sugar.
  9. 9. Mix the berries with the sugar.
  10. 10. Gently mash the sweetened berries with a potato masher.
  11. 11. Break the ladyfinger biscuits into small pieces.
  12. 12. Take four small glasses.
  13. 13. Distribute the biscuit pieces and the mashed berries evenly among the four glasses.
  14. 14. Separate the eggs so that you have the yolks and whites separately.
  15. 15. Place the egg yolks in a separate bowl.
  16. 16. Add the remaining sugar to the egg yolks.
  17. 17. Beat the egg yolks and sugar until creamy.
  18. 18. Add the lemon zest to the egg yolk cream.
  19. 19. Add the cinnamon to the egg yolk cream.
  20. 20. Add the mascarpone cheese to the egg yolk cream.
  21. 21. Gently fold in the lemon zest, cinnamon, and mascarpone cheese into the egg yolk mixture.
  22. 22. Beat the egg whites until stiff.
  23. 23. Gently fold the beaten egg whites into the mascarpone cream.
  24. 24. Distribute the finished cream over the glasses on top of the berries and biscuit pieces.
  25. 25. Place the glasses in the refrigerator.
  26. 26. Let the dessert set in the refrigerator for at least 2 hours.
  27. 27. Take the glasses out of the refrigerator when you are ready to serve the dessert.
  28. 28. Distribute the remaining fresh berries on top of the dessert.
  29. 29. Sprinkle the dessert with pink sugar as desired.
