🥤 Berry Cocktail

Ingredients
- 600 g mixed berries (e.g. strawberries, raspberries, blackberries, redcurrants, blueberries)
- 0.5 lime
- 4 whole wheat butter cookies
- 0.5 vanilla pod
- 3 egg yolks
- 100 g liquid honey (6 tbsp)
- 100 ml light grape juice
- 4 sprigs mint
Instructions
- 1. Wash the berries thoroughly or remove any spoiled parts and stems.
- 2. Cut the lime in half, rinse it under hot water, and pat it dry. Grate about one teaspoon of the zest finely. Squeeze the lime and measure out one tablespoon of juice.
- 3. Gently mix the lime zest and juice with the berries. Divide the mixture evenly among four glasses or small bowls.
- 4. Crush the cookies roughly by hand.
- 5. Slice the vanilla pod lengthwise and scrape out the inside with a knife.
- 6. Separate the eggs (use the egg whites for something else). Add the vanilla seeds, egg yolks, honey, and grape juice to a mixing bowl.
- 7. Whisk the mixture with a hand mixer over a pot of hot water until it forms a thick, foamy cream.
- 8. Wash the mint, shake it dry, and pick off the leaves. Pour the cream over the berries, sprinkle with cookie crumbs, garnish with mint, and serve immediately.
