🥤 Fruity Berry Bowl

Ingredients
- 125 g raspberries
- 125 g blueberries
- 125 g redcurrants (red or white)
- 500 ml mineral water with carbonation (well chilled)
- 1 lime
- 10 g powdered sugar (1 tbsp)
- 1 tbsp orange liqueur
- 3 sprigs lemon balm
- 350 ml tonic water (well chilled)
- 200 ml non-alcoholic sparkling wine (rosé; well chilled)
Instructions
- 1. Carefully pick over the berries, rinse them gently in a bowl if necessary, pat them dry, and set aside about 100 grams of each.
- 2. Distribute the remaining berries into two ice cube tray compartments and fill them with a little mineral water. Chill the rest of the mineral water. Place the ice cube trays in the freezer and freeze for about 2 hours.
- 3. Cut the lime in half, squeeze out the juice, and pour it into a punch bowl.
- 4. Add the reserved berries to the bowl as well. Dust them with powdered sugar and drizzle with liqueur.
- 5. Wash the lemon balm, shake it dry, and pluck off the leaves; set some leaves aside for garnish. Finely chop the rest, add it to the berries, and let the mixture steep in the refrigerator for about 40 minutes.
- 6. Pour the remaining mineral water and tonic water over the berries. Top up the bowl with ice-cold sparkling wine.
- 7. Carefully remove the berry ice cubes from the trays and add them to the bowl. Garnish with the lemon balm leaves and serve immediately.
