  1. 1. Place the stale bun in a bowl and cover it with lukewarm water.
  2. 2. Peel the shallot and chop it into very small pieces.
  3. 3. Heat one tablespoon of oil in a pan and sauté the chopped shallot in it.
  4. 4. Add the chopped parsley and marjoram to the shallot and stir.
  5. 5. Remove the pan from the heat and let the spice mixture cool down briefly.
  6. 6. Squeeze the soaked bun well with your hands so that no water remains.
  7. 7. Add the squeezed bun, the egg, and the ketchup to a large bowl.
  8. 8. Add the cooled shallot mixture and the minced meat.
  9. 9. Mix all ingredients together with your hands to form a homogeneous mixture.
  10. 10. Add breadcrumbs as needed until the mixture is moldable but not too soft.
  11. 11. Season the meat mixture generously with salt and pepper.
  12. 12. Form several equal-sized patties from the mixture.
  13. 13. Brush the patties with the remaining oil.
  14. 14. Grill the patties on a grill or in a grill pan for 2 to 3 minutes per side.
  15. 15. Cut the burger buns horizontally.
  16. 16. Place the bun halves cut-side down on the grill.
  17. 17. Grill the buns for 1 to 2 minutes until golden brown.
  18. 18. Wash the lettuce leaves under running water.
  19. 19. Pat the lettuce leaves dry with a kitchen towel.
  20. 20. Cut the dry lettuce leaves into thin strips.
  21. 21. Wash the tomatoes.
  22. 22. Cut the hard stem area off the tomatoes.
  23. 23. Slice the tomatoes into thick slices.
  24. 24. Peel the onion.
  25. 25. Cut the onion into thin rings.
  26. 26. Spread one tablespoon of mustard on the bottom half of each grilled burger bun.
  27. 27. Place a grilled patty on each bun.
  28. 28. Top the patties with the onion rings.
  29. 29. Place the tomato slices on the onions.
  30. 30. Add the lettuce strips as the final topping.
  31. 31. Place the top half of the burger bun on.
  32. 32. Serve the burgers immediately.
