🍽️ Classic Civil Servant Goose with Apple Filling

Ingredients
- 1 kg Ribs (from the breast or thick pork rib)
- 3 Boskop Apples
- 100 g Raisins
- 2 tbsp Breadcrumbs
- 1 tsp dried Marjoram
- 1 tsp Sugar
- 1 Carrot
- 2 Onions
- 3 Dried Plums
- Salt
- Pepper (from the mill)
Instructions
- 1. Place the raisins in a bowl and cover them with lukewarm water. Let them soak.
- 2. Peel the carrot. Cut it lengthwise into four equal strips.
- 3. Peel the apple. Cut it into quarters and remove the core. Slice the pieces thinly.
- 4. Drain the raisins and add them to a large bowl along with the apple slices, breadcrumbs, marjoram, sugar, and a pinch of salt.
- 5. Fill the meat casing with the apple mixture. Fill it only three-quarters full so it does not burst during cooking.
- 6. Securely close the opening of the meat casing, for example with kitchen twine or toothpicks.
- 7. Place the roast with the filling side facing up in a roasting pan.
- 8. Pour one cup of hot water over the meat.
- 9. Place the sliced onions, carrot strips, and dried plums in the pan around the meat.
- 10. Preheat the oven to 220 degrees. Place the pan in the oven.
- 11. Reduce the oven temperature to 160 degrees after 30 minutes.
- 12. Let the meat cook uncovered in the oven for another 30 minutes.
- 13. Now cover the pan and let the meat braise for another 30 minutes.
- 14. Add a little hot water to the pan from time to time if it becomes too dry.
- 15. Occasionally pour the cooking juices from the pan over the meat.
- 16. Remove the pan from the oven. Place the meat on a plate.
- 17. Keep the meat warm by placing the plate in the turned-off oven.
- 18. Deglaze the pan juices in the pan with a little water and broth.
- 19. Season the sauce with salt and pepper to taste.
- 20. Slice the meat.
- 21. Serve the meat with sides such as potatoes and the sauce.
