🍽️ Crispy Bavarian Lard Pastry Rings

Ingredients
- 0.5 cube fresh yeast (21 g)
- 250 ml lukewarm milk
- 500 g flour
- 20 g sugar
- 2 eggs
- 1 pinch salt
- 75 g melted butter
- lard (for deep-frying)
- flour (for the work surface)
- powdered sugar (for dusting)
Instructions
- 1. Crumble the yeast into the lukewarm milk and stir until it has completely dissolved.
- 2. Put the flour into a large bowl and make a small well in the center.
- 3. Pour the yeast milk into the well and add sugar, eggs, salt, and about 50 grams of soft butter.
- 4. Knead the ingredients into a soft and elastic dough.
- 5. Take 12 small pieces of the dough and roll them into round balls.
- 6. Brush the dough balls with liquid butter.
- 7. Cover the balls and let them rise in a warm place for about 10 minutes so they puff up slightly.
- 8. Dip your fingers in butter and gently stretch the dough balls into flat rings by sliding the edge through your hand.
- 9. Ensure that a thin hole is created in the center of the rings.
- 10. Put the lard in a pot and heat it to about 170 degrees Celsius.
- 11. Carefully put the dough pieces into the hot fat and fry them in batches.
- 12. While frying, pour hot fat over the pastries 1 to 2 times.
- 13. Fry the rings for 1 to 2 minutes until golden brown.
- 14. Turn the pastries carefully so that no fat runs into the center and the hole stays light.
- 15. Fry the second side for 1 to 2 minutes until golden brown as well.
- 16. Let the finished rings drain well.
- 17. Serve them with a pinch of powdered sugar.
