  1. 1. Place the bread roll in a bowl and cover it with lukewarm water.
  2. 2. Peel the onion and cut it into very small cubes.
  3. 3. Heat one tablespoon of oil in a pan and sauté the onion cubes until they are soft and translucent.
  4. 4. Finely chop the parsley and stir it into the sautéed onions.
  5. 5. Squeeze the soaked bread roll firmly with your hands until no water remains.
  6. 6. Add the minced meat, the egg, the mustard, the squeezed bread roll, and the onion-parsley mixture to a large bowl.
  7. 7. Season the mixture with salt and pepper.
  8. 8. Knead all ingredients well with your hands until a homogeneous mass is formed.
  9. 9. Shape the meat mixture into small, flat meatballs.
  10. 10. Heat some oil in a large pan and fry the meatballs on all sides until golden brown.
  11. 11. Reduce the heat to a low setting and let the meatballs cook through with the lid closed.
  12. 12. Serve the finished meatballs with pretzels and radishes.
