🍳 Hearty Farmer's Skillet with Fried Eggs

Ingredients
- 3 boiled potatoes (each 180 g)
- 250 g smoked tofu
- 1 red onion
- 4 tbsp olive oil
- 1 tsp dried thyme
- salt
- pepper
- 4 eggs
- 2 sprigs basil
Instructions
- 1. Cut the pre-cooked potatoes into small cubes.
- 2. Cut the tofu into small cubes as well.
- 3. Peel the onion.
- 4. Halve the onion.
- 5. Slice the onion halves into half-rings.
- 6. Heat two tablespoons of oil in a large pan.
- 7. Fry the potato cubes over medium heat for about five minutes.
- 8. Turn the potatoes until they are golden brown on all sides.
- 9. Add the sliced onions to the pan.
- 10. Add the smoked tofu to the pan.
- 11. Add thyme to the pan.
- 12. Season the mixture with salt.
- 13. Season the mixture with pepper.
- 14. Let the ingredients simmer over low heat for five minutes.
- 15. Heat the remaining oil in a second pan.
- 16. Fry the eggs over medium heat for about five minutes.
- 17. Fry the eggs until they are sunny-side-up.
- 18. Wash the basil.
- 19. Shake the basil dry.
- 20. Slice the basil leaves into thin strips.
- 21. Divide the potato and tofu mixture onto the plates.
- 22. Place two sunny-side-up eggs on each portion.
- 23. Garnish the dish with the basil strips.
