Ingredients
- 500 g floury potatoes
- 1 hard-boiled egg
- 1 shallot
- 100 g quark
- 75 g sour cream
- 1 tbsp chive rings
- salt
- pepper (from the mill)
- ground caraway
- 4 slices country bread
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until tender.
- 3. Peel the cooked potatoes.
- 4. Let the potatoes cool slightly.
- 5. Mash the potatoes into a smooth puree.
- 6. Peel the boiled egg.
- 7. Chop the egg coarsely.
- 8. Peel the shallot.
- 9. Chop the shallot finely.
- 10. Stir the finely chopped shallot into the quark and sour cream.
- 11. Stir the mixture until smooth.
- 12. Gently fold the potato mash into the quark mixture.
- 13. Gently fold the chopped egg into the quark mixture.
- 14. Season the spread to taste with salt.
- 15. Season the spread to taste with pepper.
- 16. Season the spread to taste with cumin.
- 17. Spread the cream onto the bread slices.
- 18. Garnish the dish with fresh chives.
- 19. Serve the bread.
