  1. 1. Separate the lettuce into individual leaves, remove any tough stems, wash thoroughly, and dry well. Set aside a few pretty small leaves to line the bowl, and chop the remaining lettuce into bite-sized pieces.
  2. 2. Peel the oranges with a sharp knife similar to an apple, remove all the white pith, and then cut out nice segments along the membranes. Catch the juice that comes out.
  3. 3. Peel the onion and slice it into thin rings.
  4. 4. Wash the radishes, remove the stems, and slice them into thin rounds.
  5. 5. Whisk the vinegar with the mustard, salt, pepper, and about 3 tablespoons of orange juice. Beat in the oil until a creamy emulsion forms, and toss the chopped lettuce leaves, radish slices, and onion rings with it.
  6. 6. Line the salad bowl with the reserved lettuce leaves, spread the dressed salad on top, and arrange the orange segments over it.
