🍽️ Fresh Batavia Salad with Radishes and Oranges

Ingredients
- 1 Batavia lettuce
- 4 Oranges
- 1 red onion
- 0.5 bunch Radishes
- 2 tbsp White wine vinegar
- 0.5 tsp Mustard
- Salt
- Pepper (from the mill)
- 3 tbsp Olive oil
Instructions
- 1. Separate the lettuce into individual leaves, remove any tough stems, wash thoroughly, and dry well. Set aside a few pretty small leaves to line the bowl, and chop the remaining lettuce into bite-sized pieces.
- 2. Peel the oranges with a sharp knife similar to an apple, remove all the white pith, and then cut out nice segments along the membranes. Catch the juice that comes out.
- 3. Peel the onion and slice it into thin rings.
- 4. Wash the radishes, remove the stems, and slice them into thin rounds.
- 5. Whisk the vinegar with the mustard, salt, pepper, and about 3 tablespoons of orange juice. Beat in the oil until a creamy emulsion forms, and toss the chopped lettuce leaves, radish slices, and onion rings with it.
- 6. Line the salad bowl with the reserved lettuce leaves, spread the dressed salad on top, and arrange the orange segments over it.
