🍽️ Fresh Fish Rolls on Batavia Lettuce

Ingredients
- 1 large head Batavia lettuce
- 400 g zander fillet
- 1 tomato
- 1 shallot
- 2 limes (juice)
- 1 tbsp olive oil
- 1 tbsp mustard
- 1 bunch basil
- salt
- pepper
Instructions
- 1. Carefully separate the Batavia lettuce heads into individual leaves.
- 2. Wash the lettuce leaves thoroughly under running water.
- 3. Gently pat the leaves dry with a kitchen towel.
- 4. Slice the fish into very thin, diagonal pieces.
- 5. Wash the tomato under running water.
- 6. Halve the tomato and remove the hard core.
- 7. Dice the tomato finely into small pieces.
- 8. Peel the shallot of its outer skin.
- 9. Dice the shallot finely as well.
- 10. Mix lime juice, olive oil, mustard, salt, and pepper in a bowl.
- 11. Stir the diced shallot into the marinade.
- 12. Pour the marinade evenly over the fish slices.
- 13. Let the fish slices marinate for five minutes.
- 14. Bring a pot of water to a boil.
- 15. Add the lettuce leaves to the boiling water for five minutes.
- 16. Prepare a bowl with cold water.
- 17. Remove the leaves immediately from the hot water and place them in the cold water.
- 18. Pat the cooled lettuce leaves dry.
- 19. Carefully pick the basil leaves off the stems.
- 20. Place a basil leaf on a fish slice.
- 21. Roll the fish slice together with the basil inside a lettuce leaf.
- 22. Place four finished rolls on a plate.
- 23. Sprinkle the rolls with the diced tomatoes.
- 24. Garnish the dish with the remaining fresh basil.
