  1. 1. Carefully separate the Batavia lettuce heads into individual leaves.
  2. 2. Wash the lettuce leaves thoroughly under running water.
  3. 3. Gently pat the leaves dry with a kitchen towel.
  4. 4. Slice the fish into very thin, diagonal pieces.
  5. 5. Wash the tomato under running water.
  6. 6. Halve the tomato and remove the hard core.
  7. 7. Dice the tomato finely into small pieces.
  8. 8. Peel the shallot of its outer skin.
  9. 9. Dice the shallot finely as well.
  10. 10. Mix lime juice, olive oil, mustard, salt, and pepper in a bowl.
  11. 11. Stir the diced shallot into the marinade.
  12. 12. Pour the marinade evenly over the fish slices.
  13. 13. Let the fish slices marinate for five minutes.
  14. 14. Bring a pot of water to a boil.
  15. 15. Add the lettuce leaves to the boiling water for five minutes.
  16. 16. Prepare a bowl with cold water.
  17. 17. Remove the leaves immediately from the hot water and place them in the cold water.
  18. 18. Pat the cooled lettuce leaves dry.
  19. 19. Carefully pick the basil leaves off the stems.
  20. 20. Place a basil leaf on a fish slice.
  21. 21. Roll the fish slice together with the basil inside a lettuce leaf.
  22. 22. Place four finished rolls on a plate.
  23. 23. Sprinkle the rolls with the diced tomatoes.
  24. 24. Garnish the dish with the remaining fresh basil.
