🍽️ Basmati Rice with Crab Meat

Ingredients
- 400 g crab meat (frozen)
- 4 garlic cloves
- 150 g shallots
- 1 bunch chives
- 2 sprigs thyme
- 1 red chili pepper
- 200 g basmati rice
- 2 tbsp oil
- 2 bay leaves
- 0.5 tsp ground pimento
- 750 ml classic vegetable broth
- salt
- pepper
- 30 g butter (1 tbsp)
- 1 lime
Instructions
- 1. Let the crab meat thaw. Peel the garlic and shallots and chop them finely.
- 2. Wash the chives, shake them dry and cut them into fine rings. Wash the thyme. Cut the chili pepper in half lengthwise, remove the seeds, wash and chop finely.
- 3. Rinse the rice in a sieve under cold water and let it drain well.
- 4. Heat the oil in a pot. Sauté the garlic and shallots briefly until translucent but not colored. Add the rice, chili, bay leaves, allspice berries and thyme and sauté briefly.
- 5. Pour in the broth, bring to a boil once and then simmer covered on low heat for about 20 minutes.
- 6. Meanwhile, check the crab meat for shell pieces and remove them. Break the meat into small pieces. Stir the crab meat and half of the chive rings into the cooked rice.
- 7. Season with salt and pepper. Fold in the butter cut into small cubes. Divide the rice onto four plates and sprinkle with the remaining chive rings. Serve with lime wedges if desired.
