🍽️ Juicy BBQ Chicken on Couscous Salad

Ingredients
- 1 Poult (from approx. 1.5 kg, cut into 8 pieces)
- Paprika powder
- Salt
- Pepper (from the mill)
- Olive oil (cold-pressed)
- Barbecue sauce (ready-made product)
- 400 g Couscous
- 5 Tomatoes
- 3 tbsp Chive rings
- 0.5 bunch Parsley
- Lemons
Instructions
- 1. Rinse the chicken pieces under running water.
- 2. Thoroughly dry the meat with a kitchen towel.
- 3. Brush the meat lightly with some oil.
- 4. Rub the chicken generously with salt, pepper, and paprika powder.
- 5. Place the pieces on a lightly greased baking sheet.
- 6. Preheat the oven to 200 degrees Celsius.
- 7. Roast the chicken in the oven for 30 to 40 minutes.
- 8. Turn the meat pieces once during the cooking time.
- 9. Brush the meat repeatedly with barbecue sauce in between.
- 10. Prepare the couscous according to the package instructions.
- 11. Let the couscous cool down completely.
- 12. Wash the tomatoes and halve them.
- 13. Remove the core of the tomatoes.
- 14. Dice the tomato flesh into small cubes.
- 15. Roughly chop the parsley.
- 16. Mix the cooled couscous with 3 tablespoons of olive oil.
- 17. Add lemon juice, parsley, and chives to the couscous.
- 18. Season the salad to taste with salt and pepper.
- 19. Cut the roasted chicken into bite-sized pieces using kitchen shears.
- 20. Optionally remove the meat from the bones.
- 21. Toss the chicken once more with 1 tablespoon of barbecue sauce.
- 22. Divide the couscous salad evenly among four plates.
- 23. Place the chicken on top of the salad.
- 24. Serve the dish immediately while warm.
