🍽️ Vietnamese Sandwiches with Smoked Tofu

Ingredients
- 200 g smoked tofu
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tsp lime juice
- pepper
- 1 carrot (approx. 100 g)
- 100 g daikon radish
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- salt
- 0.5 cucumber
- 0.5 red bell pepper
- 1 spring onion
- 1 bunch coriander (approx. 20 g)
- 1 tbsp rapeseed oil
- 100 g yogurt (1.5% fat)
- 0.5 tsp mustard
- 1 sourdough baguette (approx. 200 g)
Instructions
- 1. Slice the smoked tofu into very thin pieces.
- 2. In a bowl, mix sesame oil, soy sauce, 1 teaspoon of lime juice, and some pepper.
- 3. Place the tofu in the marinade.
- 4. Let the tofu sit in the marinade for about 15 minutes.
- 5. Clean, wash, and peel the carrots and daikon radish.
- 6. Cut the vegetables into very fine, long strips.
- 7. In a separate bowl, mix rice vinegar, maple syrup, and a pinch of salt.
- 8. Place the vegetables in the vinegar mixture.
- 9. Marinate the vegetables for another 15 minutes as well.
- 10. Wash the cucumber and bell pepper.
- 11. Cut the vegetables in half lengthwise.
- 12. Slice them into thin, long strips.
- 13. Clean and wash the spring onions.
- 14. Slice the spring onions into fine rings.
- 15. Wash the cilantro.
- 16. Shake the cilantro dry.
- 17. Heat rapeseed oil in a frying pan.
- 18. Fry the tofu over medium heat for about 2 minutes on one side until golden brown.
- 19. Fry the tofu on the other side for about 2 minutes until golden brown.
- 20. Set the marinade aside.
- 21. For the spread, mix yogurt with the remaining lime juice, mustard, salt, and pepper.
- 22. Cut the baguette into three equal pieces.
- 23. Slice the buns open lengthwise.
- 24. Spread the inside with the yogurt sauce.
- 25. Spread the inside with the remaining tofu marinade as well.
- 26. Fill the buns with the fried tofu.
- 27. Fill the buns with the marinated vegetables.
- 28. Fill the buns with the cucumber and bell pepper strips.
- 29. Garnish the sandwiches with cilantro.
- 30. Garnish the sandwiches with the spring onions.
