  1. 1. Slice the smoked tofu into very thin pieces.
  2. 2. In a bowl, mix sesame oil, soy sauce, 1 teaspoon of lime juice, and some pepper.
  3. 3. Place the tofu in the marinade.
  4. 4. Let the tofu sit in the marinade for about 15 minutes.
  5. 5. Clean, wash, and peel the carrots and daikon radish.
  6. 6. Cut the vegetables into very fine, long strips.
  7. 7. In a separate bowl, mix rice vinegar, maple syrup, and a pinch of salt.
  8. 8. Place the vegetables in the vinegar mixture.
  9. 9. Marinate the vegetables for another 15 minutes as well.
  10. 10. Wash the cucumber and bell pepper.
  11. 11. Cut the vegetables in half lengthwise.
  12. 12. Slice them into thin, long strips.
  13. 13. Clean and wash the spring onions.
  14. 14. Slice the spring onions into fine rings.
  15. 15. Wash the cilantro.
  16. 16. Shake the cilantro dry.
  17. 17. Heat rapeseed oil in a frying pan.
  18. 18. Fry the tofu over medium heat for about 2 minutes on one side until golden brown.
  19. 19. Fry the tofu on the other side for about 2 minutes until golden brown.
  20. 20. Set the marinade aside.
  21. 21. For the spread, mix yogurt with the remaining lime juice, mustard, salt, and pepper.
  22. 22. Cut the baguette into three equal pieces.
  23. 23. Slice the buns open lengthwise.
  24. 24. Spread the inside with the yogurt sauce.
  25. 25. Spread the inside with the remaining tofu marinade as well.
  26. 26. Fill the buns with the fried tofu.
  27. 27. Fill the buns with the marinated vegetables.
  28. 28. Fill the buns with the cucumber and bell pepper strips.
  29. 29. Garnish the sandwiches with cilantro.
  30. 30. Garnish the sandwiches with the spring onions.
