🍽️ Band Noodles with Radicchio

Ingredients
- 1 small head Radicchio
- 2 small red onions
- 1 tbsp pine nuts
- 75 g turkey salmon ham (without fat edge)
- 175 g pappardelle
- salt
- 2 tbsp olive oil
- 100 ml dry white wine (or grape juice)
- 150 ml soy cream
- 0.5 lemon
- pepper
Instructions
- 1. Wash the radicchio, cut it in half, and remove the hard bottom part. Then slice the vegetable into thin strips.
- 2. Peel the onions and slice them into thin strips. Toast the pine nuts in a hot, dry pan until golden brown. Remove them and let them cool on a plate.
- 3. Cut the turkey salmon ham into strips about 1 centimeter wide. Cook the band noodles in plenty of salted water for the time specified on the package until they are firm to the bite.
- 4. Heat oil in a pan and sauté the onion strips over medium heat for 4 minutes until soft but not brown. Then add the radicchio and sauté it for 1 minute.
- 5. Pour the white wine into the pan and let it reduce completely for 5 to 10 minutes.
- 6. Add the soy cream sauce to the pan and let it simmer for 2 minutes.
- 7. Add the turkey salmon ham strips and let everything cook for 1 more minute. Squeeze the lemon. Season the sauce with salt, pepper, and 2 teaspoons of lemon juice.
- 8. Drain the noodles in a colander and mix them with the sauce. Serve the dish sprinkled with the toasted pine nuts.
