🍽️ Band noodles with chive-parmesan oil and mushrooms

Ingredients
- 200 g mushrooms
- 400 g tagliatelle
- salt
- 1 bunch chives
- 5 tbsp olive oil
- 1 clove of garlic
- 1 pinch chili flakes
- 2 tbsp freshly grated parmesan
Instructions
- 1. Wash the mushrooms thoroughly and slice them into thick pieces.
- 2. Bring a large pot of water to a boil and add plenty of salt.
- 3. Cook the band noodles in this salted water for the time stated on the package until they are al dente.
- 4. Cut the chives into rings approximately 2 centimeters long.
- 5. Set aside 2 tablespoons of the chive rings to use as garnish later.
- 6. Put the remaining chives, 3 tablespoons of olive oil, peeled garlic, chili, parmesan, and a splash of pasta water into a blender.
- 7. Puree the ingredients in the blender until smooth.
- 8. Heat 1 tablespoon of oil in a pan.
- 9. Fry the mushrooms in the hot oil until brown.
- 10. Add the drained noodles to the pan.
- 11. Toss the noodles and mushrooms well to mix them.
- 12. Pour the chive oil over the noodles.
- 13. Mix everything thoroughly together.
- 14. Continue tossing the pan for about another 1 minute.
- 15. Season the noodles with salt at the end.
- 16. Fill the noodles into pre-warmed bowls or plates.
- 17. Sprinkle the finished noodles with the reserved chive rings and serve.
