🍽️ Band Noodles with Shrimp and Vegetable Sauce

Ingredients
- 1 Carrot
- 1 Onion
- 6 Garlic Cloves
- 1 Chili Pepper
- 8 Tbsp Olive Oil
- 200 g Tomatoes (can, drained)
- Salt
- Pepper (from the mill)
- 350 g Band Noodles (Tagliatelle)
- 1 Tbsp Parsley
- 200 g Shrimp (peeled and ready to cook)
- 1 piece Parmesan
Instructions
- 1. Peel the carrot and the onions.
- 2. Cut the vegetables into small cubes.
- 3. Peel four garlic cloves.
- 4. Finely chop the garlic.
- 5. Thoroughly wash the chili pepper.
- 6. Heat six tablespoons of olive oil in a pan.
- 7. Sauté the prepared vegetables in the hot oil.
- 8. Add the drained tomatoes to the pan.
- 9. Mash the tomatoes slightly with a spoon.
- 10. Let the sauce simmer for about 15 minutes.
- 11. Cook the band noodles in a large pot with plenty of salted water.
- 12. Cook the noodles al dente (firm to the bite).
- 13. Peel the remaining garlic.
- 14. Press the garlic through a garlic press.
- 15. Cut the shrimp into diagonal slices.
- 16. The slices should be about 2 cm thick.
- 17. Heat the remaining olive oil in a separate pan.
- 18. Fry the shrimp for 2 minutes.
- 19. Stir the parsley into the tomato sauce.
- 20. Stir the pressed garlic into the tomato sauce.
- 21. Season the sauce with salt to taste.
- 22. Season the sauce with pepper to taste.
- 23. Drain the cooked noodles.
- 24. Mix the noodles with the sauce.
- 25. Serve the dish on pre-warmed plates.
- 26. Shave Parmesan into thin slices using a vegetable peeler.
- 27. Sprinkle the dish with the Parmesan shavings.
