🍽️ Band Noodles with Butternut Squash

Ingredients
- 700 g Butternut Squash (1 piece)
- 1 Shallot
- 100 g Pine Nuts
- 2 Stalks Parsley
- 2 Sprigs Thyme
- 125 g Mozzarella (1 ball)
- 20 g Parmesan (1 piece)
- 1 Organic Lemon
- 2 tbsp Olive Oil
- 250 ml Vegetable Broth
- Salt
- Pepper
- 400 g Whole Wheat Band Noodles
Instructions
- 1. Peel the butternut squash and remove the insides with the seeds.
- 2. Cut the flesh into approx. 1 cm cubes.
- 3. Peel the shallot.
- 4. Chop the shallot very finely.
- 5. Heat a pan without fat.
- 6. Roast the pine nuts in the pan until they smell fragrant.
- 7. Remove the pine nuts from the pan.
- 8. Let the pine nuts cool.
- 9. Wash the herbs under running water.
- 10. Shake the herbs dry.
- 11. Chop the herbs finely.
- 12. Tear the mozzarella into small pieces.
- 13. Grate the parmesan.
- 14. Wash the lemon under hot water.
- 15. Pat the lemon dry.
- 16. Finely grate the zest of half a lemon.
- 17. Set the lemon zest aside.
- 18. Squeeze the juice from the lemon.
- 19. Heat the oil in a pan.
- 20. Sauté the shallot in it until translucent over medium heat.
- 21. Add the squash cubes to the pan.
- 22. Add the chopped herbs to the pan.
- 23. Sauté everything for another 2 minutes.
- 24. Deglaze the pan with the lemon juice.
- 25. Deglaze the pan with the broth.
- 26. Season the squash mixture with salt.
- 27. Season the squash mixture with pepper.
- 28. Simmer the squash mixture over medium heat for 15–20 minutes.
- 29. Cook the noodles in boiling salted water according to package instructions until al dente.
- 30. Drain the noodles.
- 31. Fold the noodles in with the pine nuts into the squash mixture.
- 32. Fold the noodles in with the lemon zest into the squash mixture.
- 33. Season the dish with salt.
- 34. Season the dish with pepper.
- 35. Divide the band noodles among 4 plates.
- 36. Sprinkle the noodles with the mozzarella.
- 37. Sprinkle the noodles with the parmesan.
