  1. 1. Peel the butternut squash and remove the insides with the seeds.
  2. 2. Cut the flesh into approx. 1 cm cubes.
  3. 3. Peel the shallot.
  4. 4. Chop the shallot very finely.
  5. 5. Heat a pan without fat.
  6. 6. Roast the pine nuts in the pan until they smell fragrant.
  7. 7. Remove the pine nuts from the pan.
  8. 8. Let the pine nuts cool.
  9. 9. Wash the herbs under running water.
  10. 10. Shake the herbs dry.
  11. 11. Chop the herbs finely.
  12. 12. Tear the mozzarella into small pieces.
  13. 13. Grate the parmesan.
  14. 14. Wash the lemon under hot water.
  15. 15. Pat the lemon dry.
  16. 16. Finely grate the zest of half a lemon.
  17. 17. Set the lemon zest aside.
  18. 18. Squeeze the juice from the lemon.
  19. 19. Heat the oil in a pan.
  20. 20. Sauté the shallot in it until translucent over medium heat.
  21. 21. Add the squash cubes to the pan.
  22. 22. Add the chopped herbs to the pan.
  23. 23. Sauté everything for another 2 minutes.
  24. 24. Deglaze the pan with the lemon juice.
  25. 25. Deglaze the pan with the broth.
  26. 26. Season the squash mixture with salt.
  27. 27. Season the squash mixture with pepper.
  28. 28. Simmer the squash mixture over medium heat for 15–20 minutes.
  29. 29. Cook the noodles in boiling salted water according to package instructions until al dente.
  30. 30. Drain the noodles.
  31. 31. Fold the noodles in with the pine nuts into the squash mixture.
  32. 32. Fold the noodles in with the lemon zest into the squash mixture.
  33. 33. Season the dish with salt.
  34. 34. Season the dish with pepper.
  35. 35. Divide the band noodles among 4 plates.
  36. 36. Sprinkle the noodles with the mozzarella.
  37. 37. Sprinkle the noodles with the parmesan.
