  1. 1. Roughly chop the walnuts. Toast them in a pan without oil until they turn light brown.
  2. 2. Rinse the sage leaves and shake them dry. Cut them into thin strips.
  3. 3. Cook the pasta in plenty of boiling salted water according to the package instructions until al dente.
  4. 4. Add the walnuts, sage, broth, and soy cream to a pan. Heat the mixture while stirring.
  5. 5. Remove the rind from the Gorgonzola and cut the cheese into small pieces. Add them to the sauce and let them melt while stirring.
  6. 6. Drain the pasta and let it drip well. Mix it with the sauce, season with salt and pepper, and serve immediately.
