  1. 1. Put yogurt butter, 60 grams of sugar, and vanilla sugar into a bowl. Beat the mixture with a hand mixer on the highest setting for 3 to 4 minutes until creamy and airy.
  2. 2. Slice the vanilla pod lengthwise. Scrape out the seeds with the tip of a knife and add them to the butter-sugar mixture.
  3. 3. Separate the eggs into yolks and whites. Stir the egg yolks one by one into the butter-sugar mixture.
  4. 4. Peel the bananas and place them on a plate. Mash them into a very fine puree using a fork.
  5. 5. Stir the mashed bananas and quark (a type of fresh cheese) into the butter mixture using a wooden spoon.
  6. 6. Beat the egg whites with a pinch of salt and the remaining sugar in a tall container until stiff peaks form.
  7. 7. Sift flour and baking powder over the butter mixture. Gently fold in the dry ingredients along with the oat flakes. Finally, carefully fold in the stiffly beaten egg whites.
  8. 8. Line the bottom of a 26-centimeter springform pan with baking paper and pour in the batter. Bake the cake in a preheated oven at 180 degrees Celsius conventional heat (fan: 160 degrees Celsius, gas: level 2-3) on the second rack from the bottom for about 45 minutes.
  9. 9. To check for doneness, insert a wooden skewer into the center of the cake. If it comes out clean, the cake is done. If not, bake it for a few more minutes.
  10. 10. Let the cake cool slightly in the pan. Carefully loosen it from the edges with a small knife and turn it out onto a cooling rack.
  11. 11. Remove the base and the baking paper. Turn the cake over and let it cool completely. Dust it evenly with powdered sugar sifted through a small sieve. Cut the cake into 12 pieces and serve.
