🍰 Moist Banana Cake

Ingredients
- 100 g yogurt butter
- 120 g sugar
- 1 packet vanilla sugar
- 1 vanilla pod
- 3 eggs (M)
- 400 g ripe bananas (2 ripe bananas)
- 1 pinch salt
- 250 g low-fat quark
- 150 g spelt flour
- 1 packet baking powder
- 75 g oat flakes
- 20 g powdered sugar (2 tbsp)
Instructions
- 1. Put yogurt butter, 60 grams of sugar, and vanilla sugar into a bowl. Beat the mixture with a hand mixer on the highest setting for 3 to 4 minutes until creamy and airy.
- 2. Slice the vanilla pod lengthwise. Scrape out the seeds with the tip of a knife and add them to the butter-sugar mixture.
- 3. Separate the eggs into yolks and whites. Stir the egg yolks one by one into the butter-sugar mixture.
- 4. Peel the bananas and place them on a plate. Mash them into a very fine puree using a fork.
- 5. Stir the mashed bananas and quark (a type of fresh cheese) into the butter mixture using a wooden spoon.
- 6. Beat the egg whites with a pinch of salt and the remaining sugar in a tall container until stiff peaks form.
- 7. Sift flour and baking powder over the butter mixture. Gently fold in the dry ingredients along with the oat flakes. Finally, carefully fold in the stiffly beaten egg whites.
- 8. Line the bottom of a 26-centimeter springform pan with baking paper and pour in the batter. Bake the cake in a preheated oven at 180 degrees Celsius conventional heat (fan: 160 degrees Celsius, gas: level 2-3) on the second rack from the bottom for about 45 minutes.
- 9. To check for doneness, insert a wooden skewer into the center of the cake. If it comes out clean, the cake is done. If not, bake it for a few more minutes.
- 10. Let the cake cool slightly in the pan. Carefully loosen it from the edges with a small knife and turn it out onto a cooling rack.
- 11. Remove the base and the baking paper. Turn the cake over and let it cool completely. Dust it evenly with powdered sugar sifted through a small sieve. Cut the cake into 12 pieces and serve.
