🍰 Crunchy Oat Banana Cookies

Ingredients
- 250 g soft butter
- 150 g brown sugar
- 100 g sugar
- 2 eggs
- 200 g flour
- 1 tsp baking powder
- 1 pinch salt
- 1 overripe banana
- 220 g fine oats
- 2 tbsp coconut flakes
- 100 g chopped nuts (e.g. almonds or peanuts)
- 50 g raisins
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan circulation.
- 2. Line a baking tray with baking paper.
- 3. Beat the butter together with both types of sugar until creamy.
- 4. Gradually stir in the eggs into the butter-sugar mixture.
- 5. Mix the flour with the baking powder and salt in a separate bowl.
- 6. Add the flour mixture to the dough and stir it in.
- 7. Peel the banana and mash it finely with a fork.
- 8. Fold the mashed banana into the dough.
- 9. Add the oat flakes, coconut flakes, nuts, and raisins.
- 10. Stir everything until the dough is smooth and homogeneous.
- 11. Take a tablespoon of dough and form it into a small mound.
- 12. Place the mounds on the prepared tray with enough space between them.
- 13. Bake the cookies for 12 to 15 minutes until golden brown.
- 14. Remove the finished cookies from the tray.
- 15. Let them cool completely on a wire rack.
