  1. 1. Let the puff pastry (a pre-made dough made of many thin layers) thaw. Then roll it out until it is slightly larger than your tart pan. Line the pan with it, including the sides, and prick the bottom several times with a fork.
  2. 2. Peel the bananas and slice them. Drizzle with lemon juice.
  3. 3. Whisk the cream with 3 tablespoons of honey, the eggs, cinnamon, and vanilla sugar. Pour the mixture onto the dough. Bake the tart in the preheated oven at 180 degrees Celsius for about 30 minutes.
  4. 4. Remove the tart and arrange the banana slices on top. Brush with melted honey and bake for another 10 minutes until golden brown.
