🍰 Airy Banana and Quark Muffins

Ingredients
- 2 ripe bananas
- 1 egg
- 300 g low-fat quark
- 75 g butter
- 1 organic orange
- 150 g wheat flour
- 50 g whole wheat semolina
- 2 tsp baking powder
- powdered sugar from raw cane sugar (for dusting)
Instructions
- 1. Peel the bananas and mash them thoroughly in a bowl using a fork.
- 2. Add the egg, the quark, the butter, and the mashed banana to the bowl.
- 3. Wash the orange under hot water and dry it thoroughly.
- 4. Grate some of the peel and squeeze out the juice.
- 5. Add the peel and juice to the batter and stir everything well.
- 6. Mix the flour with the baking powder and the semolina in a separate bowl.
- 7. Stir the flour mixture into the batter quickly until just combined.
- 8. Place the paper liners into the cups of a muffin tin.
- 9. Fill the liners with the batter.
- 10. Preheat the oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-assisted; gas mark 2 to 3).
- 11. Bake the muffins for 25 to 30 minutes.
- 12. Check the muffins with a wooden skewer inserted into the center to see if it comes out clean.
- 13. Take the muffins out of the oven.
- 14. Let them cool down slightly.
- 15. Dust them with powdered sugar.
