🍰 Crunchy Bars with Banana and Cherry

Ingredients
- 2 Bananas
- 50 ml Almond Drink (Almond Milk)
- 75 g dried sour cherries
- 2 tbsp Pumpkin Seeds (each 15 g)
- 150 g rolled oats
- 50 g spelt wholemeal flour
- 50 g coconut flakes
- 0.5 tsp Cinnamon
- Salt
- 60 g liquid coconut oil
Instructions
- 1. Peel the bananas.
- 2. Cut the bananas into coarse pieces.
- 3. Place the banana pieces and the almond drink in a tall container.
- 4. Puree the mixture with a hand blender until it forms a smooth mass.
- 5. Coarsely chop the cherries.
- 6. Coarsely chop the pumpkin seeds.
- 7. Place the oat flakes in a large bowl.
- 8. Add the flour to the bowl.
- 9. Add the coconut flakes to the bowl.
- 10. Add the chopped cherries to the bowl.
- 11. Add the pumpkin seeds to the bowl.
- 12. Add the cinnamon to the bowl.
- 13. Add a pinch of salt to the bowl.
- 14. Mix all dry ingredients in the bowl well together.
- 15. Add the banana puree to the bowl.
- 16. Add the oil to the bowl.
- 17. Knead the ingredients into a smooth dough.
- 18. Line a baking tray with baking paper.
- 19. Spread the dough on the tray.
- 20. Ensure the dough is about 1 cm high.
- 21. Preheat the oven to 160 °C (convection 140 °C; gas: mark 2).
- 22. Place the baking tray on the lower rack.
- 23. Bake the sheet for 1 hour.
- 24. Remove the muesli sheet from the oven.
- 25. Cut the sheet directly on the tray into 12 bars using a sharp knife.
- 26. The bars should be approx. 4 x 10 cm each.
- 27. Reduce the oven temperature to 100 °C (convection 80 °C; gas: mark 1).
- 28. Dry the bars in the oven for another 30 minutes.
- 29. Remove the bars from the oven.
- 30. Let the bars cool completely on the tray.
