🍽️ Fluffy Banana Bars with Chocolate

Ingredients
- 3 ripe bananas
- 1 egg
- 2 tbsp almond butter (15 g each)
- 3 tbsp melted coconut oil
- 60 g whole cane sugar
- 200 g spelt flour Type 1050
- 1 tsp baking powder
- 0.5 tsp baking soda
- 1 pinch salt
- 0.25 tsp vanilla powder
- 40 g walnut kernels
- 40 g chocolate chips (min. 70 % cocoa content)
Instructions
- 1. Peel the bananas.
- 2. Mash the bananas in a large bowl until they form a fine puree using a fork.
- 3. Add the egg, almond butter, oil, and sugar to the bowl.
- 4. Stir the ingredients well together with the bananas.
- 5. Take a second bowl.
- 6. Mix the flour, baking powder, baking soda, salt, and vanilla in it.
- 7. Add the dry ingredients to the banana mixture.
- 8. Stir everything until you have a smooth and thick batter.
- 9. Roughly chop the walnuts.
- 10. Gently fold the walnuts and chocolate chips into the batter.
- 11. Line a square baking pan with baking paper.
- 12. Spread the batter evenly in the pan.
- 13. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 14. Bake the blondies for 25 to 30 minutes.
- 15. Make sure the surface turns golden brown.
- 16. Insert a wooden skewer into the center.
- 17. The blondies are done when the skewer comes out clean.
- 18. Let the blondies cool in the pan for 10 minutes.
- 19. Carefully lift them out of the pan.
- 20. Let them cool completely.
- 21. Cut them into pieces.
- 22. Serve them.
