🍽️ Sweet and Sour Date Balsamic Drizzle

Ingredients
- 20 g pine nuts (2 tbsp)
- 200 g small shallots
- 80 g dates (6 dates)
- 8 tbsp balsamic vinegar
- 125 ml classic vegetable broth
- 1 tsp cornstarch
- salt
- pepper
Instructions
- 1. Heat a pan without oil.
- 2. Toast the pine nuts in the hot pan.
- 3. Wait until the nuts are golden yellow.
- 4. Remove the pine nuts from the pan.
- 5. Place the nuts on a plate.
- 6. Let the pine nuts cool down completely.
- 7. Roughly chop the cooled nuts with a knife.
- 8. Peel the shallots.
- 9. Do not cut off the root ends of the shallots.
- 10. Cut the shallots in half through the middle.
- 11. Place the shallot halves in a small pot.
- 12. Pour the vegetable broth over the shallots.
- 13. Heat the mixture in the pot.
- 14. Cover the pot with a lid.
- 15. Let the shallots simmer over low heat.
- 16. Cook the shallots for 20 minutes.
- 17. Stir the mixture occasionally.
- 18. Pit the dates.
- 19. Cut the dates into thin strips.
- 20. Whisk the balsamic vinegar with the cornstarch.
- 21. Stir until no lumps remain visible.
- 22. Add the date strips to the shallots in the pot.
- 23. Pour the vinegar-starch mixture into the pot.
- 24. Bring the sauce to a boil briefly.
- 25. Let the sauce cool down for 30 minutes.
- 26. Season the sauce with salt to taste.
- 27. Season the sauce with pepper to taste.
- 28. Serve the finished sauce.
- 29. Sprinkle the toasted pine nuts over the sauce.
