Ingredients
- 1 Organic Lemon
- 160 g Oat Flakes
- 50 g Rice Flour
- 1 tsp Baking Powder
- 2 Pinches Vanilla Powder
- 100 ml Oat Drink (Oat Milk) (no added sugar)
- 100 g Applesauce
- 100 g Soy Quark (no added sugar)
- 60 g Raspberries
- 2 Stems Mint
- 50 g Walnut Kernels
Instructions
- 1. Rinse the lemon under hot water and dry it thoroughly. Grate the zest finely and squeeze out the juice.
- 2. Grind the oats in a blender or food processor until fine. Mix the oat flour with rice flour, baking powder, vanilla powder, 2 tablespoons of lemon juice, oat milk, apple puree, and 50 grams of soy quark until smooth.
- 3. Pour the mixture into an ovenproof dish and smooth the top. Bake the baked oats without banana in a preheated oven at 180 °C (convection 160 °C; gas mark 3) for 20 to 25 minutes.
- 4. Meanwhile, check the raspberries for any bad spots and remove them if necessary. Wash the mint, shake it dry, pluck the leaves from the stems, and cut them into thin strips. Finely chop the walnut kernels.
- 5. Remove the baked oats without banana from the oven and let them cool down slightly. Serve topped with the remaining soy quark, mint, raspberries, walnut kernels, and lemon zest.
