  1. 1. Slice the baguettes horizontally in half. Whisk the eggs with the cream and season the mixture generously with salt and pepper.
  2. 2. In a small pan with some hot butter, fry four small omelets one after the other. Roll each finished omelet tightly.
  3. 3. Wash the tomatoes, cut out the hard stem ends, and slice them thinly. Wash the arugula, remove damaged leaves, and spin it dry.
  4. 4. Fill the baguette halves with the tomato slices, the arugula, and one roll of the omelet each. Serve the sandwich immediately.
