🍽️ Baguette Sandwich with Arugula, Tomatoes and Egg

Ingredients
- 4 Baguette rolls
- 4 eggs
- 2 tbsp heavy cream
- salt
- pepper (from the mill)
- butter (for frying)
- 4 tomatoes
- 100 g arugula
Instructions
- 1. Slice the baguettes horizontally in half. Whisk the eggs with the cream and season the mixture generously with salt and pepper.
- 2. In a small pan with some hot butter, fry four small omelets one after the other. Roll each finished omelet tightly.
- 3. Wash the tomatoes, cut out the hard stem ends, and slice them thinly. Wash the arugula, remove damaged leaves, and spin it dry.
- 4. Fill the baguette halves with the tomato slices, the arugula, and one roll of the omelet each. Serve the sandwich immediately.
